Orange River Mud Pudding

Posted on Mon October 12, 2026 in Recipes.

I can't seem to recall where this recipe originated. It was definitely in one of my many cookbooks, and somewhere in the back of my mind it seems to be either Lynn Bedford-Hall or Ina Paarman. It appears to be a plain chocolate cake, but it is light and chocolaty and just melts in your mouth!

This is a dessert that should be served warm, but our son prefers it cold, chilled even. The generous amount of chocolate in the recipe seems to solidify when it is chilled, almost like you're eating a block of chocolate! We've had to borrow a picture of the internet, as we don't seem to have taken one of our dessert. The upside of that is we've seen a couple of very cool ways to serve it to make the dessert even more decadent.

Orange River Mud Pudding

Ingredients:

  • 250 g Butter
  • 1 Tbsp Whisky
  • 3/4 c White sugar
  • 250 g Dark Chocolate, finely chopped (don't go for Lindt 70% here, Bourneville chocolate works much better in this recipe)
  • 1 1/2 c Hot water
  • 1 1/2 c Cake Flour
  • 1 1/2 tsp baking powder
  • 1/4 c Cocoa powder
  • 2 XL Eggs, lightly beaten
  • 1 tsp Vanilla Extract

Method:

  • Preheat the oven to 180° C.
  • Spray a medium sized ovenproof dish with non-stick spray.
  • Melt the butter in a saucepan. Add the whisky, sugar, chocolate and water, stirring until the chocolate has melted.
  • Sift dry ingredients and beat into the chocolate mixture.
  • Add the eggs and vanilla and mix. Pour into the dish.
  • Bake in the pre-heated oven for 45 minutes until a skewer inserted in the center comes out clean.
  • Serve with cream or ice cream, and a berry coulis if desired.
