Everyone's Favourite Lamb Shanks

I'm not one for stew and bone in meat dishes, but after a local resident served us lamb shanks at a dinner party, I just had to get the recipe off her!
Have you ever wondered how we make our lamb shanks? Here is the recipe that we received from a friend in KwaNojoli (Somerset East) after a dinner party.
Lamb shanks (Serves 8)
Ingrediens:
- 8 Lamb shanks
- 60 ml Olive Oil
- 3 each Carrots, onions and celery sticks, sliced
- 1/2 c Tomato Paste
- 1 Tbsp Thyme, finely chopped
- 1 Tbsp Rosemary, finely chopped
- 4 Anchovy Fillets, finely chopped
- 2 Bay leaves
- 410g can chopped tomatoes
- 1 c Red Wine
- 1 c Chicken Stock
- 2 Tbsp plain flour
- Salt & Pepper to taste
Method:
- Preheat the oven to 150 degrees Celsius
- Lightly dust the shanks in seasoned flour. Brown in olive oil and set aside in a roasting tray.
- Add the onion to the oil and brown slightly. Add the tomato, herbs, anchovies, wine and stock.
- Pour tomato mixture over the shanks, and add the bay leaves.
- Cover and cook in the oven for 1 hour.
- Add the vegetables, cover again, and cook a further 1 hour.
