Everyone's Favourite Lamb Shanks

I'm not one for stew and bone in meat dishes, but after a local resident served us lamb shanks at a dinner party, I just had to get the recipe off her!

Have you ever wondered how we make our lamb shanks? Here is the recipe that we received from a friend in KwaNojoli (Somerset East) after a dinner party.

Lamb shanks (Serves 8)

Ingrediens:

  • 8 Lamb shanks
  • 60 ml Olive Oil
  • 3 each Carrots, onions and celery sticks, sliced
  • 1/2 c Tomato Paste
  • 1 Tbsp Thyme, finely chopped
  • 1 Tbsp Rosemary, finely chopped
  • 4 Anchovy Fillets, finely chopped
  • 2 Bay leaves
  • 410g can chopped tomatoes
  • 1 c Red Wine
  • 1 c Chicken Stock
  • 2 Tbsp plain flour
  • Salt & Pepper to taste

Method:

  • Preheat the oven to 150 degrees Celsius
  • Lightly dust the shanks in seasoned flour. Brown in olive oil and set aside in a roasting tray.
  • Add the onion to the oil and brown slightly. Add the tomato, herbs, anchovies, wine and stock.
  • Pour tomato mixture over the shanks, and add the bay leaves.
  • Cover and cook in the oven for 1 hour.
  • Add the vegetables, cover again, and cook a further 1 hour.
